Herring Avocado and Dill Mayonnaise

Ingredients:


Dill Sweet Cured Herring
2 ripe avocado pears
Fresh dill chopped
Fresh limejuice
200ml thick Greek yoghurt
1-tablespoon low fat mayonnaise
1-teaspoon ground coriander

Method:
 
1. Remove herring from marinade, cut into chunks and put into a bowl

2. Mix the yoghurt, coriander and mayonnaise until smooth, add lime juice, a little of the dill marinade, sea salt and black pepper to taste

3. Cut the avocado into quarters length ways and then into eights, removing the skin as you cut up, dip in to lemon juice or limejuice to prevent browning.  Cut into chunks and add to the herring.

4. Fold the fresh dill into the dressing, reserve a handful for garnish and then add the dressing to the herring and avocado mixture.

5. Fold all the ingredients together gently and then pour into a serving dish.

6. Garnish liberally with fresh dill; serve with crusty bread, oatcakes or tortilla chips
