Summer Isles Smorgastartor

Ingredients:

This is a very visual Swedish dish made with finest Scottish produce and perfect for buffets. With kind permission of Wendy Barrie of the Scottish Food Guide

1 small wholemeal loaf
150g Summer Isles smoked salmon
150g cooked peeled North Atlantic prawns
4 hard­boiled free range eggs
150mls mayonnaise
Freshly milled pepper
225g soft cream cheese
Half a cucumber 1 lemon

Method:

  • Cut crusts off bread and slice 3 times through the centre as you would slice a sponge cake to fill it, giving you 4 large slices.
  • To prepare fillings, firstly make an egg mayonnaise with chopped eggs combined with two thirds of the mayonnaise. season and set aside.
  •  Next mix the remaining mayonnaise with half the prawns and a squeeze of lemon juice.
  • Place first slice on a platter. spread with half the egg mayo. Place on next slice and fill with prawn mix.
  • Repeat process with remaining egg and top with final slice. In effect you have rebuilt your loaf!
  • Coat the whole loaf in an even layer of fresh cheese. Add a little natural yoghurt if necessary to make it spread easily.
  • Decorate sides with diced cucumber and top with smoked salmon, remaining prawns and slices of lemon.
  • Chill for a couple of hours before serving then slice as you would a cake.
