Smoked Mackeral Pate

Smoked Mackerel Pate

Ingredients:

1 pack peppered smoked mackerel
 
1 small pack cream cheese - you can use any including 'light' for a low fat dish
 
Juice of 1 lemon
 
Finely chopped parsley

Method:

Skin the mackerel and break into pieces into a bowl.  Add the cheese and mash the two together with a fork - you can make the mixture course or fine according to your preference.  Add the lemon juice and mix in well, finally adding the chopped parsley to taste.  Delicious served with hot toast or with good Scottish oatcakes.  Excellent as a snack or for a starter course.
